Ingredients

  • 2 c flour
  • 1 c sugar
  • 3 t baking powder
  • 3/4 t salt
  • 1/2 c orange juice
  • 1/2 c milk
  • 1/3 c butter or margarine, melted
  • 1 egg beaten
  • 1 1/2 c fresh or frozen cranberries halved
  • 1/2 c chopped pecans
  • 2 T grated orange peel

Preparation

Step 1

In a mixing bowl, combine flour, sugar, baking powder and salt. In another bowl combine the oj, milk, butter and egg. Stir into dry ingredients until just moistened. Fold in cranberries, pecans and orange peel. Fill muffin tins 3/4 full. Bake at 400 for 18 - 20 minutes.
