Smoked Sausage Hot Potato Salad

Ingredients

  • 6 medium potatoes
  • salt
  • 2 medium scallions, thinly sliced
  • 3/4 lb smoked sausage, sliced
  • 2 tbsp salad oil
  • 2 tbsp sugar
  • 1 tbsp flour
  • 1/4 cup cider vinegar
  • 1/4 cup minced parsley

Preparation

Step 1

Boil potatoes, in skins, in 2 quarts water and 1 tbsp salt until tender, about 30 minutes. Drain and remove skins. Cut into 3/4 inch chunks. Add the scallions, cover and keep warm. Meanwhile heat oil in 10" skillet. Add the smoked sausage and brown lightly. Remove from heat and add to potatoes and cover. Into the hot drippings in the skillet, over low heat, stir the sugar, flour, and 1 tsp salt. Gradually stir in the vinegar and 1/2 cup water. Cook stirring constantly until thick. Pour over potato and sausage mixture. Add parsley and mix. Add more salt if needed.

I usually make an additional half recipe of sauce. Instead of recipe measurements, I use:
3 tbsp sugar
1 1/2 tbsp flour
1/3 cup cider vinegar
3/4 cup water
