Cheesy Egg Potato and Ham Frittata Brunch Casserole

Ingredients
- 3 Tbsp butter
- 3 tbsp oil
- 4 cups hash brown potatoes (shredded)
- 1 medium onion, finely chopped
- 405 green onions, chopped
- cayenne pepper
- 2 tsp seasoning salt
- black pepper
- 1 lb cooked ham, cubed
- 12 eggs
- 1/4 cup whipping cream ( or use full-fat milk or 18% table cream)
- pinch italian seasoning
- 2 cups grated cheddar

Preparation
Step 1
Set oven to 375
Butter 13x9 inch baking dish
Heat oil and butter in skillet; add in frozen shredded potatoes, both onions, cayenne pepper, 1 tsp seasoned salt and black pepper to taste; cook for 8-10 min or until lightly browned
Add in ham an cook for 3 min, mixing occasionally; transfer mixture to the prepared baking dish
In a bowl whisk together eggs with whipping cream, italian seasoning and 1 tsp seasoned salt then pour egg mixture into baking dish, toss with potatoes
Bake for 20-22 min
Remove from oven and sprinkle 2 cups grated cheddar; return to oven for 5-8 more min or until cheese is melted and eggs are set.
Cool for about 10 min.
