Mushroom Stuffed Pork Chops

Ingredients
- 1/2 cup chopped mushrooms
- 1/4 cup chopped onion
- 2 tablespoon butter, divided
- 1 teaspoon minced ginger
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup coarsely chopped fresh spinach
- 1/4 cup breadcrumbs
- 4 thick boneless pork chops

Step 1
1. Preheat oven to 400.
2. To prepare stuffing, cook mushrooms and onions in 1 tablespoon butter in a saucepan until the onion is tender; remove from heat.
3. Stir in ginger, salt and pepper.
4. Add spinach and breadcrumbs, tossing gently to combine.
5. Trim fat from the pork and make a pocket in each chop.
6. Spoon 1/4 of the stuffing into each pocket and secure with a toothpick if necessary.
7. Heat butter in a cast iron skillet over medium-high heat.
8. Add chops and sear for 5 minutes on each side.
9. Place skillet in oven for an additional 7 minutes, or until chops are cooked through.
