    lb stewing beef cut into chunks

  • ½

    tsp each salt and pepper

    onion chopped

  • 2

    cloves garlic minced

  • 1

    can coconut milk

  • 1

    C cranberry cocktail

  • 3

    T brown sugar

  • 2

    T each lime juice and tomato paste

  • 1

    T fresh ginger minced

  • 2

    Tsp curry paste

  • C craisins

  • 1

    red pepper chopped

  • ¼

    C each fresh coriander and peanuts chopped

Directions

heat oil toss beef in flour and s & p brown beef in batches and reserve reduce heat to medium add the onion and garlic cook stirring until golden stir in coconut milk with cranberry juice, sugar, lime juice tomato paste ginger and curry paste until combined add beef and coconut mix to pan bring to boil simmer partially covered for 1 hour uncover and stir in craisins and red pepper simmer for 30 minutes or till broth is thickened and beef is tenderstir in coriander and sprinkle with peanuts just before serving serve over rice Shopping list:
