Ingredients

  • 1 c buttermilk
  • 1/4 c EVOO
  • 4 pitas, 6" torn into pieces (about 6 cups)
  • 3 c watercress, trimmed & torn
  • 1 c sliced [carrots]
  • 1 c cucumber, chopped
  • 4 oz crumbled Feta (about 1c)
  • 2 T lemon juice
  • Salt
  • Pepper

Preparation

Step 1

1. Combine buttermilk & EVOO.
2. Toss w/torn pitas.
3. Let sit, stirring occasionally, until softened, 10-15 min.
4. Add watercress, [carrots], cucumber, Feta, lemon juice, salt, & pepper.
5. Toss to combine.
