Jerk Pork Cheeseburgers with Green Apple Slaw

We like to serve this with roasted carrot fries...
Ingredients
- 2 granny smith apples, peeled, grated & patted dry
- grated peel of 1 lemon plus 1 1/2 tbsp juice
- 1/2 cup mayo
- 1/3 cup chopped chives
- 3 tbsp maple syrup
- 3 tbsp jamaican jerk seasoning
- 1 1/2 lbs ground pork
- 8 slices applewood smoked bacon
- 4 oz smoked cheddar cheese, thinly sliced
- 4 kaiser rolls, toasted

Preparation
Step 1
In med bowl, toss apples with lemon peel and juice, add mayo, chives, 1 1/2 tbsp maple syrup and 1 tsp jerk seasoning, stir to combine, refridgerate.
In lg bowl, whisk tog remaining 1 1/2 tbsp syrup & 2 tbsp jerk sesoning, add pork and combine. Shape into 4 patties, pressing thumb in center to prevent from bulging.
In lg skillet, cook bacon until crisp, drain on paper towels, reserving drippings. Cover bacon with foil to keep warm, heat drippings over med-high heat until sizzling, add patties, cook 4 min, flip, lower heat and cook 3 min more. Lower heat to low, top w/cheese, cook until melted 2 min more. Assemble sandwich- patty on roll, top with 2 bacon slices, apple slaw and roll top....
