Ingredients

  • 2 chicken breast - boanless and skinless
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 pound of potatoes cut into 1-inch cubes
  • 2 teaspoons peprika
  • 1-1/2 teaspoons crushed rosemary leaves
  • 1 teaspoon minced garlic
  • 1/2 teaspoon coarse ground black pepper

Preparation

Step 1

Preheat oven to 425°F

Mix the oil and all spices and salt in a large bowl.

Add chicken and potatoes, toss to coat well.

Line an 8 X 11 pan with foil.

Arrange chicken and potatoes in a single layer on foil.

Roast 30 minutes or until chicken is cooked through and potatoes are tender.
