Secret garlic mashed potatoes

  • 5 lbs unpeeled red potatoes
  • 1 1/2 cups butter at room temperature
  • 5 oz Romano grated cheese
  • 1/4 cup minced garlic
  • 2 1/2 tsp dried oregano
  • 1 tsp salt

Preparation

Step 1

Bring a large pot of salted water to boil. Add potatoes and cook until tender but still firm, about 20 minutes; drain well. Stir in butter, then add cheese, garlic, and oregano. Mash with a potato masher or with an electric mixer. Stir in salt.

Drop the butter in first and give it a couple of mashes, and then add rest of the ingredients. Do not over mash or they will get sticky.

If you decide to reduce the butter and add milk, the milk must be added after you mash in the butter, or the butter will not bind with the starch in the potatoes.
