Cranberry Orange Cupcakes

Ingredients

  • Cake:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled slightly
  • 2 eggs
  • 1/2 tsp vanilla
  • 1/2 cup milk
  • Filling:
  • 1 1/2 cups white sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1 (12 ounce) package fresh cranberries
  • 1/4 cup lemon juice
  • 1 dash ground cinnamon
  • 2 teaspoons butter
  • Frosting:
  • 1/4 cup butter, softened
  • 2 cups confectioners' sugar
  • 1 teaspoon grated orange peel
  • 3/4 teaspoon vanilla extract
  • 2 to 3 tablespoons orange juice

Preparation

Step 1

Cake:
In a small bowl, mix flour, baking powder and salt
In a large bowl, whisk together sugar, butter, eggs and vanilla until smooth. Alternately whisk in flour mixture and milk in three additions. Beating until smooth.
Scoop batter into prepared pan. Bake in preheated oven for 20-25 minutes until golden and brown.let cool in pan or rack for 10 min. Remove from pan and cool comepletely on rack.

Filling:
Preheat oven to 425 degrees F (220 degrees C.)
In a saucepan, combine sugar, flour, salt and water. Bring to a boil and cook, stirring constantly until thick and smooth. Add berries, lemon juice and cinnamon. Cook 5 minutes until mixture is thick and berries pop. Remove from heat and stir in butter.

Frosting:
In a small bowl, cream butter until light and fluffy. Beat in the confectioners' sugar, orange peel and vanilla. Add enough orange juice to achieve frosting consistency.
