Stuffed Lettuce Salad


This is a delicious salad which includes a blue cheese topping that can be made the day before. It calls for a whole head of iceberg lettuce but I cut the amount of lettuce needed into wedges, wash it and chill it. Then I top the amount that I need before the meal with the blue cheese filling and dressing. Serve the wedges individually on a dessert plate for added effect.

  • 1 medium sized head of lettuce
  • 1/2 lb of blue cheese
  • 1 pkg of cream cheese
  • 2 tab cream( I substitute skim milk)
  • 1 tab chopped chives
  • 8 stuffed olives sliced
  • 3 dashes of Tabasco sauce
  • 1 hard boiled egg
  • Paprika sprinkled for color

Preparation time 30mins
Cooking time 40mins


Step 1

Wash lettuce and remove core. Refrigerate lettuce until ready to use. Make cheese spread and refrigerate, the longer it sits the better.
Fill lettuce head core area with cheese mixture. Egg can paprika be sprinkled on top of lettuce of mixed into cheese dip. Chill thoroughly. Slice with sharp knife into wedges. Top with favorite dressing. I use Blue Cheese dressing. Delicious!!!
