Ingredients

  • Frosting:
  • 1 1/2 c Whole Wheat Flour
  • 1/2 c white flour
  • 2 t cinnamon
  • 2 t soda
  • 1/2 t salt
  • 3 eggs
  • 3/4 c oil
  • 3/4 c buttermilk
  • 2 c sugar (1 c white & 3/4 c brown)
  • 2 c grated carrots
  • 1/2 c nuts
  • 1/2 c sesame seeds
  • 3 1/2 oz Coconut
  • 1/2 c buttermilk
  • 3 T cream cheese
  • 1 c sugar
  • 1 T corn Syrup
  • 1/2 stick butter softened

Cooking time 75mins

Preparation

Step 1

Combine dry ingredients. Mix together eggs, oil, buttermilk and sugar. Add carrots, nuts, seeds and coconut to egg mix. Fold in dry ingredient mix. Bake at 350 degrees 1 hour in an angel food pan.

Beat together ingredients for frosting well, till smooth and spread.
