Curried Carrot Soup

Ingredients

  • 6 oz. chopped onion
  • 5 1/2 oz. shredded carrot
  • 2 tsp. olive oil
  • 900 ml. chicken stock
  • 1 cup milk, 1%
  • 1 tsp. curry powder
  • 4 1/2 oz. chopped celery
  • Salt and pepper to taste

Preparation

Step 1

Heat oil in pot and saute onion, carrot and celery until soft.

Add remaining ingredients, except milk, and simmer for 20 minutes.

Add milk and return to simmer.

Serves 4 - 100 calories per serving.
