Curried Carrot Soup

Ingredients
- 6 oz. chopped onion
- 5 1/2 oz. shredded carrot
- 2 tsp. olive oil
- 900 ml. chicken stock
- 1 cup milk, 1%
- 1 tsp. curry powder
- 4 1/2 oz. chopped celery
- Salt and pepper to taste

Servings 4
Preparation
Step 1
Heat oil in pot and saute onion, carrot and celery until soft.
Add remaining ingredients, except milk, and simmer for 20 minutes.
Add milk and return to simmer.
Serves 4 - 100 calories per serving.
