  • 2 Tbsp. vegetable oil, plus more for frying
  • 1 1/2 C. cake flour
  • 2 Tsp. baking powder
  • 1/2 Tsp. salt
  • 1 1/4 Tsp. ground cinnamon
  • 1/3 C. plus 1/2 C. granulated sugar
  • 1 egg
  • 1/2 C. milk
  • 1/2 C. mashed banana (about 1)
  • 1/4 Tsp. banana extract

Step 1

Heat 2 inches oil in skillet over med-high heat. Whisk flour, baking powder, salt, 1/4 Tsp. cinnamon and 1/3 C. sugar in bowl. Whisk egg, milk, mashed banana and 2 Tbsp. oil in another bowl. Add extract. Combine remaining 1/2 C. sugar and 1 Tsp. cinnamon in shallow bowl. Set aside. Whisk banana mixture into dry ingredients until moisened. Working in batches, drop rounded tsp. full of dough into hot oil until golden brown. About 15 seconds per side.. Remove with slotted spoon and drain on paper towels. Roll in cinnamon sugar while still warm.
