Ingredients

  • 1 1/2 c brown sugar
  • 2/3 c vegetable shortening
  • 1 t vanilla extract
  • 2 large eggs
  • 1 1/2 c flour
  • 1/3 c cocoa powder
  • 1/4 t baking soda
  • 1/2 t salt
  • 1 c zucchini
  • 2 c chocolate chips (semi-sweet)

Preparation

Step 1

Preheat oven to 375 degrees. Place sheets of foil on countertop for cooling cookies.

Combine brown sugar, shortening and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat eggs into creamed mixture.

Combine flour, cocoa, baking soda and salt. Mix into creamed mixture at low speed just until blended. Stir in zucchini and chocolate chips.

Drop by rounded tablespoonfuls of dough 2" apart onto ungreased baking sheet.

Bake on baking sheet at a time for 7-9 minutes or until cookies are set. DO NOT OVER BAKE. Cool 2 minutes on baking sheet. Remove cookies to foil to cool completely.
