Ingredients
- 1 Package JiffY Cornbread Mix
- 2 beaten eggs
- 1 15 oz. can of crearned corn
- 2 11oz. cans of sweet niblets corn, drained
- 1 large minced onion
- 1 stick butter (reduced calorie ok)
- 2 cups sour cream (lite is ok)
- 3 cups sharp cheddar cheese, grated

Preparation
Step 1
In a deep bowl mix eggs, add in package of cornbread
Mix in the three cans of corn. creatned and niblets
In a deep frying pan, saute onion in stick of butter
Add onion mixture to egg and corn mixture, then stir in two cups of sour cream. Mix in about half of the grated cheese, then spread mixture over the bottom of a 13 x 9 casserole dish
Sprinkle the other half of the grated cheese
(1 1/2cups) over the top
Bake at 400 degreesfor 40 min.
