Creamed Spinach Casserole

Ingredients
- 3 10 oz pkf froz spinach, thawed
- 1 c milk
- 1/4 c flour
- 1/4 t salt
- 1/4 t pepper
- 1/8 t nutmeg
- 1 c sharp cheddar
- 1 c low fat cottage cheese
- 3 large egg whites

Preparation
Step 1
Preheat to 350. Coat a shallow baking dish with spray.
Drain spinach thru mesh stariner and pulse in food processor.
Combine milk , flour, s&p, and nutmeg in large saucepan. Cook over med heat while whisking until thickened (2-4 mins) Remove from heat and stir in cottage cheese and 1/2 c cheddar and spinach.
Beat egg whites in large bowl with mixer, slowly increasing speed till they foam and peak.
Gently fold egg whites into spinacj mixture.
Transfer to baking dish and bake for 35 min. Top with remaining cheddar and continue baking till cheese melts about 10 mins. Let stand for 5 mins.
