  • 4 lg eggs
  • 3 c zucchini, grated (liquid squeezed out)
  • 1 c bisquick
  • 1/2 c red onion, chopped
  • 1/2 c parmesan cheese, grated
  • 1/4 c vegetable oil
  • 2 Tbsp fresh basil, chopped
  • 1 Tbsp fresh oregano, chopped
  • 1 Tbsp dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp salt and pepper
  • 4 slc bacon, cooked and chopped



Step 1

1. Preheat oven to 350°. Spray a 9x13 cake pan with non-stick spray very generously. **You can also make these in muffin pans, you may need to adjust your cooking time. Watch closely for doneness and brownness.**

2. Beat eggs and then combine all ingredients and mix well with a spoon until very well incorporated.

3. Spread in prepared pan and bake for 25 to 30 minutes, until edges are golden brown. Let cool for 10 minutes, then cut into 24-32 pieces.

4. ***The number of pieces will depend on if you are serving this as an appetizer, side dish or main course. These are delicious on their own but can also be served with a side of marinara sauce.***
