Watermelon Cranberry Sorbet

Ingredients
- 4 cups cubed seedless watermelon
- 1/2 cup sugar
- 1/3 cup cranberry juice
- 1 envelope unflavored gelatin

Step 1
1. Place watermelon cubes in a food processor or blender. Cover and process or blend until smooth (should have 3 cups pureed watermelon). Stir in sugar.
2. In a small saucepan combine cranberry juice and gelatin. Let mixture stand for 5 min. Stir mixture over low heat until gelatin is dissolved.
3. Stir the gelatin mix into the melon mix. Pour into 8x8x2 in baking dish. Cover and freeze about 2 hours or until firm.
4. Break up frozen mix and place in a large chilled mixing bowl. Beat with an electric mixer on medium to high speed until mix is light colored and fluffy. Return to pan. Cover and freeze 6 hrs or until firm.
