Slow Cooker Sweet Potato Casserole with Pecan Topping

Ingredients
- Filling:
- 2-29 oz cans sweet potatoes in syrup, drained and mashed
- 1/3 c butter, melted
- 1/2 c sugar
- 3 T light brown sugar
- 2 large eggs, lightly beaten
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/4 tsp ground nutmeg
- 1/3 c heavy cream
- Topping:
- 3/4 c chopped pecans
- 3/4 c light brown sugar
- 1/4 c flour
- 2 TB melted butter

Preparation
Step 1
Combine first 8 ingredients in a large bowl. beat at medium speed with mixer until smooth. Add cream, stir well. Pour into lightly greased 3-quart slow cooker.
Combine pecans and remaining 3 ingredients. Sprinkle over sweet potatoes. Cover and cook on high 3-4 hours.
