Ingredients

  • 1 Tbsp lemon juice
  • 1 Tbsp cornstarch
  • 1 tsp soy sauce
  • 1 clove finely chopped garlic
  • 2 boneless. skinnedchicken breast halved and cut into strips
  • Sauce;
  • 1/2 cup water
  • 2 Tbsp lemon juice
  • 1 Tbsp sugar
  • 2 tsp soy sauce
  • 1 Tbsp olive oil
  • 3 oz. sliced mushrooms
  • 1 tsp grated fresh ginger
  • 2 cups iceberg lettuce

Step 1

1. Prepare chicken with marinade; Combine lemon juice, cornstarch, soy sauce, garlic and chicken in small bowl
2. Prepare Sauce: Combine water,
lemon juice, sugar and soy sauce in bowl.
3. Heat oil in large nonstick skillet over
medium-high heat. Add chicken with
marinade. Cook, stirring, until chicken is
slightly browned, 3 minutes. Add
mushrooms and ginger; cook, stirring 3 minutes or until mushrooms are tender.
4. Add Sauce. Cook, stining constantly,
1 to 2 minutes or until thickened and bubbly.

Serve over shredded lettuce or in lettuce cups
