Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • 3 eggs
  • 1-1/4 cups oil (may sub applesauce for low fat recipe)
  • 2 tsp vanilla
  • 1 8-oz can crushed pineapple, drained
  • 2 cups ripe mashed bananas (4-6 medium)

Step 1

Combine flour, sugar, salt, baking soda, and cinnamon. In 2nd bowl, beat eggs and oil (or applesauce) together. Stir in vanilla, add pineapple and bananas. Stir this mixture into dry ingredients until moistened. Pour batter into 2 greased loaf pans. Bake at 350° for 60-65 minutes or until they test clean. Cool 10 minutes in pans. Remove and cool completely. Enjoy!
