Crunchy Cheesy Potato Casserole

Yummy,and gooey with cheese, topped with crunchy, buttery cornflakes. This casserole is easy to make, travels well, and holds its heat on a buffet. These are also known as Pot Luck, Church Luncheon, Funeral Potatoes.

Ingredients
- Base:
- 1 large pkg frozen southern-style hashbrowns, thawed
- In Saucepan:
- 1/4 cup butter
- 1 can Cream of chicken soup
- 1 cup sour cream
- 1/2 cup chopped green onion
- 1 1/2 cup grated cheddar cheese
- salt and pepper
- Add sauce to potatoes.
- Topping:
- 2 cups smashed Corn Flakes and
- 2 Tbsp melted butter.

Preparation
Step 1
In a medium saucepan, melt butter. Add the soup and heat through. In a large bowl, pour hot mixture over potatoes. Stir well to break up any clumps. Mix with remaining ingredients. Place in a 9 x 13 pan.
Sprinkle with topping.
Bake at 350 deg F 30 to 40 minutes. Check for doneness.
