Bratton's Clam Chowder

Ingredients
- 2 cans chopped clams
- 1 cup chopped celery
- 1 cup chopped onion
- 1/2 cup chopped carrots
- 2 cups diced potatoes
- 1 quart half and half
- 3/4 cups butter
- 3/4 cups flour
- 1 1/2 tsp salt
- 1/2 tsp sugar

Preparation
Step 1
Combine clams, celery, onion, carrots and potatoes in a large pan including juice from clams and enough water to cover. Simmer until vegetables are tender.
Melt butter, then add flour, salt and sugar. It will be thick. Slowly add the half and half. Stir over medium heat until thick.
Before adding white sauce to the vegetables, pour off water and save. Then add water to the thickness of the soup you desire.
This recipe may be cut in half.
