I have a huge can of pumpkin and needed something to do with is. This was perfect!

Ingredients

  • 1 29 oz can pumpkin puree
  • 1 12 oz can evaporated milk
  • 3 eggs
  • 1 cup white sugar
  • 1/2 teaspoon salt
  • 4 teaspoons pumpkin pie spice
  • 1 18.25 oz box yellow cake mix (can use spice or vanilla)
  • 3/4 cup butter
  • 1 cup chopped walnuts

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease cake pan (2 8 inch or 1 9 x 13).

In large bowl, combine pumpkin, milk, eggs, sugar, salt & pumpkin pie spice. Mix well. Pour batter into prepared pan.

Sprinkle dry cake mix evenly over batter. Melt butter and drizzle over cake mix. Sprinkle walnuts over the top.

Bake 55 to 60 minutes or until done.
