Eggs - Asparagus Frittata

Ingredients

  • 5 large eggs, beaten
  • 3 T. chopped parsley
  • 1/2 cup freshly grated Parmigianno-Reggiano
  • 3 T. extra virgin olive oil, divided
  • Freshly ground pepper
  • 2 cloves garlic, chopped
  • 8 oz asparagus

Preparation

Step 1

Whisk the eggs, parsley, cheese and 1 T olive oil and pepper.
Sauté garlic and asparagus in olive oil for 6 minutes or until tender
Add the egg mixture, and cook for about 4 minutes or until the bottom sets.
Invert the frittata onto the lid and slice it back into the skillet. Cook the other side for another 2 minutes, slice and serve.
