Ingredients

  • 8 potatoes
  • 2 tsp. celery seed
  • 4 hard boil eggs
  • 1 1/2 cup mayonnaise
  • 2 carrots; chopped thin
  • 2 TB sugar
  • 1 onion; chopped finely
  • salt & pepper to taste
  • 2 TB white vinegar
  • 1 green pepper, chopped

Preparation

Step 1

Boil potatoes until firm; not too soft; cool in refrigerator until cold and able to handle. Mix mayonnaise, vinegar, sugar, salt, pepper, and celery seed in bowl. When potatoes are cooled, peel skin off and cut into bite size pieces. Add mayonnaise mixture along with carrots, green pepper and cut up eggs. Mix gently with wooded spoon; refrigerate until cold

Can serve in individual baked potato skins:
Bake potatoes, scoop inside out and fill with salad; refrigerate until cold .
