Zucchini Parmigiana

The zucchini is baked into a parmigiana but does not have the traditional frying step. Use large baking pan and making one layer allows the zucchini to dry up in the oven, and you will have more crispy cheese top.

Ingredients
- 2 ponds medium zucchini
- 1/2 tsp kosher salt
- 1 Tbsp unsalted butter at room temp
- 4 ounces slice bread
- 4 cups marinara sauce
- 2 cups shredded mozzarella
- 1 cup grated parmigiana Reggiano cheese
- 1/4 cup chopped fresh basil

Preparation
Step 1
Preheat oven to 400 degrees F.
Bring a large pot of water to boil. Add the whole zucchini, and bring back to a boil. Simmer until the zucchini are almost tender throughout, about 15 minutes. Drain, cool, and slice lengthwise
