Ingredients

  • Glaze:
  • Butter, for greasing pan
  • Flour, for dusting pan
  • 1 3oz pkg lime flavored gelatin
  • 1 1/3 c granulated sugar
  • 2 c sifted all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 c vegetable oil
  • 3/4 c orange juice
  • 1 Tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 5 large eggs, slightly beaten
  • 1/2 c key lime juice(25 small key limes, or 4 lg limes)
  • 1/2 c confectioner's sugar
  • Icing:
  • 1/2 c (1 stick butter), room temp
  • 1 8oz pkg cream cheese, room temp
  • 1 pound confectioners sugar

Step 1

For the cake: Preheat oven to 350 degrees and grease and flour 9x12x2 inch cake pan.

In a lg mixing bowl, mix the gelatin, granulated sugar, flour, salt baking powder and baking soda. Stir ti mix well. Add the oil, orange juice,lemon juice, vanilla and eggs. Mix until well combined. Pour the batter evenly in the pan and bake for 35-40 minutes. Test for doneness with toothpick. Cool the cake in the pan for 5 minutes, then turn out onto coooling rack.

For the glaze: While the cake is still hot, mix the lime juice and confectioners sugar together well. Pierce the cake with a fork to allow glaze to soak in better and pour it over the cake on the cooling rack.

For the icing: Cream the butter and cream cheese. Beat the confectioners sugar until mixture is smooth and easy to spread. Spread the icing on the top and sides of cake.

Cook's note: You can also use 3 9in round cake pans to make a layer cake.
