Ingredients

  • 1 med zucchini
  • 1 med vadilia, diced
  • 1 med green pepper, diced (optional)
  • 2 lg tomatoes, cut into pieces
  • Shredded Sharp cheddar, Mexican & Parmesan cheeses
  • Cooking spray
  • Sauce
  • 1 c sm curd cottage cheese
  • 1/2 c sour cream
  • Powdered ranch dressing mix (to taste)
  • Garlic powder (to taste)
  • Fresh ground pepper
  • Other ground seasonings that you like

Preparation

Step 1

Blend all sauce ingredients by hand or mixer. Taste & adjust seasonings.

Cut zucchini into slices & place in bottom of casserole dish sprayed with Pam. Layer diced onion & green pepper on top of zucchini. Put cut tomato pieces on top of these.

Pour sauce over veggies & bake at 350 for 30 min. Stir cooked sauce & veggie mixture before adding cheeses. Add layers of cheeses listed or other cheeses if preferred. Bake another 10-15 min until cheeses melt.
