Ingredients
- 1 spaghetti squash
- 1/2 onion (chopped)
- 2 bell peppers (chopped)
- 1 zucchini (sliced and quartered)
- A handful or two of sliced spinach leaves
- 2 tomatoes (diced)
- 1/4 cup of chopped parsley
- Garlic, Salt, and Pepper to taste

Preparation
Step 1
Squash:
Poke the squash with a fork five times and microwave the squash for 12 minutes. Then cut it in half, take out the seeds, and scrape out the spaghetti squash with a fork.
Sauce:
Put the rest of the ingredients into a pot and put on the stove over heat, covered, until the ingredients are tender and the tomato juice has covered them.
Serve with lemon juice, salt, and pepper over top of the spaghetti squash and sauce.
This feeds about 5 people and if you need some meat, add some ground sausage to the sauce.
