Ingredients

  • 1/2 C shallots, finely chopped
  • 1/2 C white wine
  • 1/4 C white wine vinegar
  • 1/4 C heavy cream
  • 1/2 stick butter
  • dash salt&white pepper
  • 2 T minced capers
  • 3 T lemon juice

Preparation

Step 1

Combine shallots,wine,vinegar, and capers. Simmer til it is reduced by half. Put through the blender. Return to stove and add cream and bring back to simmer. Turn heat to high and melt the butterinto the sauce
Add pepper andsalt and lemon juice
