Asian Bok Choy Slaw

This recipe goes with pork tacos. Any recipe for pork is fine. You can even buy the pork pre-made in the container, a Smithfield brand is best. The slaw is perfect with the shredded pork.

Ingredients
- Dressing:
- 2-3 cups Baby bok choy, thinly sliced, including the green tops
- 1/4 c carrots, grated
- 1/4 c red radishes, sliced thin
- 2 tbs cilantro, chopped, if not fresh, dried is okay
- 3-4 green onions, sliced thin and use the green too
- 1 jalapeno, seeded and sliced thin
- 1 tbs toasted sesame seeds
- 4 tbs seasoned rice vinegar
- 2 tbs mayo
- 1 tbs sugar (stevia okay)
- 1 tsp coarse salt
- 1/2 tsp white pepper

Step 1
Mix all of the ingredients for the bok choy slaw. Mix the dressing ingredients together in a separate bowl.
Then toss together.
Place pork in tortilla, flour or corn, then serve slaw mixture on top. Enjoy!
