Chicken & Asparagus Chowder

Ingredients
- 4 T butter
- 1 lg onion, diced
- 1/2 c chopped celery
- 1/4 c chopped red bell pepper
- 1/4 c flour
- 3 c chicken broth
- 1 lg potato, diced
- 1 1/2-2 c diced chicken
- 1 lb asparagus, 1/2" lengths
- 2 c heavy cream
- 1 t salt
- 1/4 t pepper
- 1 T parsley

Preparation
Step 1
In large saucepan, heat butter. Saute the onion & celery for 3 mins. Add pepper & cook 1 min longer. Stir in flour; add broth and stir to blend. Add potato & bring to boil. Reduce heat, cover and simmer 15 mins. Add asparagus & chicken, cook another 15 mins. Add cream and salt & pepper. Stir in parsley just before serving.
