Ingredients
- 1 lb. asparagus
- 2 T EVOO
- 2 T freshly grated parmesan cheese
- 1 tsalt & pepper
- lemon zest

Preparation
Step 1
Cut asparagus into 1-2" pieces. Fill a good-sized saucepan half way with water, bring to a boil. Add the asparagus and reduce heat slightly. Parboil the asparagus for exactly 2 mins. Drain the hot water. Toss asparagus with olive oil, parmesan, and lemon zest. Salt & pepper to taste. Seve warm or room temperature.
