Stuffed tomatoes

  • 4 med to large size tomatoes
  • 1/2 pd bulk sausage meat crumbled
  • 1 small onion chopped
  • 1-2 cloves garlic finely chopped
  • 1 c cooked rice
  • 2 T basil
  • 3 T grated parmesan cheese



Step 1

Preheat oven to 400
cut tops off tomatoes and scoop out insides leaving 1/4 in shell
saute sausage in med size skillet till browned and fat is rendered out
add onion and garlic and saute till onion is tender about 5 mins
remove from heat and add rice and basil to sausage in skillet
spoon stuffing into hollow tomatoes
sprinkle tops with bread crumbs and parmesan
place tomatoes in shallow baking dish
bake in 400 degree oven 15 mins
