Ingredients
- 1 9 inch deep dish pie crust
- 1 whole onion red or white chopped
- 8 basil leaves chopped
- 2 c shredded cheese (1 c cheddar & 1 c mozzarella)
- 1/2 mayo
- 1 t hot sauce
- kosher salt & ground black pepper
- crumbled cooked bacon (optional)
- 6-7 good size roma tomatoes or 4-5 good size native tomatoes
- If you use natives you have to seed, chop and squeeze moisture out

Step 1
preheat oven to 350 and bake defrosted pie crust about 10 mins-if you brush the crust with egg white before and after baking it will help to keep it from getting soggy
saute the onion in a little butter and put on bottom of pie shell
then on tomatoes and them sprinkle with basil
in a medium bowl mix the cheese and mayo together with hot sauce and salt and pepper-spread over tomato mixture-if using bacon sprinkle on cheese mixture-the mixture of cheese should be like a gooey snow ball
bake until browned and bubbly 40-45 mins
**hint dust tomatoes with a little flour
