Roasted Tomatoes/w/Basil Soup

You can make just the tomatoes with onion and garlic or the whole thing.

Ingredients

  • 3 pounds rope tomatoes, cut into medium pieces. If tomatoes aren't in season, use cherry tomatoes.
  • olive oil
  • 1 tbs salt ( I think this it too much, salt according to your taste
  • 1 tbs sugar
  • 1 1/2 tsp freshly ground black pepper
  • 1 medium onion, chopped
  • 4-6 garlic cloves, minced
  • 1/2 tsp crushed red pepper flakes
  • Preheat the oven to 300 degrees F. Toss together the tomatoes, olive oil, sugar, salt, garlic, onion, pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 1-1/2 - 2 hours. Cool.
  • 1 tsp fresh thyme leaves
  • 1 quart chicken stock
  • 1 quart chicken stock
  • 1/2 cup minced basil leaves
  • 1 tbs balsamic vinegar
  • 2 cups tomato juice
  • 2 tbs chopped parsley
  • 2 tbs chopped chives

Preparation

Step 1

Place cooled tomatoes in a blender or food processor with the rest of the ingredients Pulse until smooth. This can be served cold or hot. You can top with sour cream, plain yogurt or creme fraiche, chives and parsley. Great bloody Marys.
