Ingredients

  • Cookies:
  • 1 cup butter
  • 1 cup sugar
  • 1 (16 oz) can pumpkin
  • 1 egg
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 cups flour
  • Icing:
  • 3 tbsp butter
  • 2 tsp milk
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 1 cup powdered sugar

Preparation

Step 1

Cookies:
Preheat oven to 375°.
Cream together sugar, butter, pumpkin, and egg.
Add flour, baking soda, cinnamon, and walnuts.
Mix well.
Drop onto ungreased cookie sheet and bake approximately 10 minutes. Cookies will be soft.

Icing:
Combine butter, milk, and brown sugar in a pot and stir (cook) until smooth.
When sugar dissolves, remove from heat and cool for 5 minutes.
Add vanilla and powdered sugar. (if too thick, add 1 tsp. of warm water.)
Spread onto cooled cookies.

Guilt Free Version: Substitute, in batter only, equal amounts of apple sauce for the butter. The consistency will be a little different but when you are icing them and eating them at the same time, you never notice!
