Ingredients

  • For Sweet Potatoes:
  • Rub with oil and salt.
  • 4 scrubbed and dried sweet potatoes
  • For the topping:
  • Combine:
  • 1/2 c. sour cream or plain yogurt
  • 1 T. pure maple syrup
  • 2 t. jalapeno seeded minced
  • 1 t. fresh lime juice
  • salt and tobasco to taste

Step 1

Preheat oven to 450 on center rack.

Rub scrubbed dried sweet potatoes with oil and salt. Bake directly on rack for 40-45 minutes, or until soft when pierced.

Combine all topping ingredients; chill until ready to serve.
