Oven Fries with Garlic Aioli

Ingredients

  • 2 pounds russet potatoes, scrubbed and cut lengthwise into 1/2 inch wedges
  • 2 tbsp olive oil
  • Salt and Pepper
  • 1 cup mayo
  • 2 tsp fresh lemon juice
  • 1 clove garlic, finely chopped
  • 1 1/2 tsp smoked paprika

Preparation

Step 1

1. Heat oven to 400 degrees.
2. Toss the potatoes with the oil, 1 tsp salt and 1/4 tsp pepper. Roast until golden and crisp, 45 - 50 min.
3. Whisk together mayo, lemon juice, garlic, paprika, and 1/4 tsp salt. Serve the potatoes with the aioli for dipping.
