Ingredients
- 4 artichokes
- 1 large red pepper
- 2 1/2 tablespoons safflower oil
- 1 1/2 tablespoons olive oil
- 2 ripe tomatoes peeled, seeded, and chopped
- 1 teaspoon tomato paste
- 1 tablespoon chopped shallots
- 1 garlic clove chopped
- 2 tablespoon fresh basil or 2 teaspoon of dry basil
- 1 scallion chopped
- 2 tablespoons balsamic vinegar
- 1/4 teaspoon salt
- ground pepper

Preparation
Step 1
peal red pepper and chop coarsely. In skillet heat oils and add pepper and saute for 2 minutes. Add tomatoes and tomato paste, shallots, garlic, basil and cook stirring frequently about 5 minutes until red pepper is tender. Add scallion, vinegar, salt, and pepper and simmer for about 2 minutes.
put mixture in food processor and puree. Chill for an hour.
