Ingredients

  • 4 large baking potaotes
  • 1 tbsp. olive oil
  • 1/4 cup Parmesan
  • 1 cup shredded mozzarella
  • 3 medium tomatoes, sliced
  • 1 large onion, sliced thinly
  • 1/2 tsp. each: oregano, salt
  • 1/8 tsp. pepper
  • 2 tbsp. butter

Preparation

Step 1

Peel & slice potatoes in 1/4 inch slices. Oil 9 X 13" casserole. Combine 2 cheeses, reserve some for topping. Arrange potatoes, tomatoes and onion slices in layers. Sprinkle each layer with cheese and seasonings. Dot with butter and bake uncovered at 400F for 30 mins. Remove from oven and sprinkle with remaining cheese; bake for an additional 20 mins.
