Candy's Honey-Glazed Carrots

  • 1 T. vegetable oil
  • 2 lbs. carrots, cut in 1 inch pieces
  • 1 cup low sodium chicken broth
  • 1/2 cup honey
  • 2 T. red wine vinegar
  • salt & pepper
  • 2 T.unsalted butter



Step 1

In a large skillet heat oil over med-high. Add carrots, cook, stirring once until beginning to brown, about 2 min.

Add broth, honey, and vinegar;season with salt & pepper. Bring to a boil; reduce to a simmer, cover, and cook until crisp-tender, 10 min. Uncover, and cook over med-high until carrots are tender and liquid is syrupy, 7-9 min more (until just a small amount of liquid is remaining).

Remove skillet from heat, add butter & swirl until melted.
