Bonnie's Pot Roast with Onions

Ingredients
- 1 lb onions, about 4
- 1 T. oil
- 1 1/2 lb chuck roast
- 1 2/3 c. beef stock (Swanson's beef broth is best)
- Salt and pepper to taste

Preparation
Step 1
Slice onions.
Heat oil in large pot over medium heat and brown the meat on all sides, about 15 minutes all together.
Add the onions, the stock, salt and pepper.
Cover and cook over low heat until fork-tender (or bake in oven at 300 degrees, 2 - 2 1/2 hours).
Remove the meat to a platter and cover loosely with foil to keep warm.
Reduce broth by half OR make into gravy to serve with meat.
