Ingredients

  • 3

    ears corn

  • 1

    avocado, cut up

  • 2

    scallions, thinly sliced

  • 1

    T olive oil

  • ½

    t kosher salt

  • ¼

    t black pepper

Directions

Using a sharp knife, cut the kernels off the corn. In a medium bowl, toss with other ingredients and mix well. Refrigerate for 5-10 mins and serve.
