Twice Baked Potato

  • 6 large baking potatoes
  • 3 slices bacon
  • 1/2 c. sour cream
  • 1/2 c. milk
  • 1 1/2 t. salt
  • 1/8 t. pepper
  • 4 chopped green onions
  • 1/2 c. shredded Cheddar cheese

Preparation

Step 1

Preheat oven to 400 degrees. Wash potatoes and rub skins with oil. Bake for 1 hour, or until potatoes are done. While potatoes are baking, cook bacon until crisp. Drain and crumble; set aside. Reduce oven heat to 350 degrees. Cut each potato in half. Scoop out pulp. Mix pulp; add sour cream, milk, salt, pepper and green onion. Fill potato shells with mixture and sprinkle with shredded cheese and crumble bacom. Bake at 350 degrees for 30 minutes.
