Baby Bok Choy with Shiitake Mushrooms

Ingredients
- 4 stalks baby bok choy, stems chopped
- 4 large dried shiitake mushrooms
- 2 garlic cloves, sliced
- 1 tablespoon sesame oil
- 1 tablespoon soy sauce
- 3/4 tablespoon sugar

Preparation
Step 1
1. Soak mushrooms in warm water for 20 minutes until softened. Slice in half and set aside, reserving about 1/2 cup of the mushroom water.
2. Heat skillet to high and add sesame oil. When hot, add in garlic and stir fry until fragrant, about 1 minute.
3. Add in baby bok choy and mushrooms and stir fry until lightly wilted, about 2 minutes. Add in the reserve mushroom water (this helps to steam the bok choy a little, speeding up the cooking process and adding in flavor as well).
4. Add in soy sauce and sugar, mix well, and enjoy!
