Ingredients
- 6 large eggs
- 1/2 cup corn kernels
- 1 (4 1/2 oz) can chopped green chilies
- 1/4 cup low-fat milk
- 1 T parsley
- 2 tsp chopped fresh thyme
- 1/4 tsp ground pepper
- 3 dashes hot pepper sauce
- 8 cherry tomatoes, halved
- 1 scallion, cut into 1" pieces
- 1/2 pound ground sausage

Step 1
Brown sausage in a small pan. Whisk together eggs, corn, chilies, milk, parsley, thyme, ground pepper, hot pepper sauce and cooked sausage in a large bowl. Spray a large non stick skillet with canola spray and set over medium heat.* Add the egg mixture, top with tomatoes, cut side up, and the scallion. Cook, covered, until eggs are set (about 15 minutes).
* You can also put the egg mixture into an oven-proof casserole dish and bake at 360 degrees until eggs are set (about 15-20 minutes).
