Ingredients

  • Cake:
  • 1 pkg white cake mix
  • 1 3.4-oz instant lemon pudding
  • 1 c water
  • 4 egg whites
  • 2 T oil
  • Icing:
  • 1 8-oz cream cheese, softened
  • 1/4 c butter, softened
  • 2 T lemon juice
  • 1 16-oz pkg powdered sugar

Preparation

Step 1

Preheat oven to 350.
Combine cake ingredients on low until moistened then on med for 2 min. Batter will be thick. Spoon into 24 paper-lined muffin cups.

Bake 21-24 min or til done. Cool in pan 10 min. Remove to wire rack & cool completely.

Beat 1st 3 icing ingredients til blended. Gradually add sugar. Ice cupcakes
